Job Objective/ Summary: Working primarily in Health Services areas, as part of a multi-disciplinary team, this position addresses the nutritional and dietary aspects of health services residents’ care in order to enhance their mental, social, emotional, and spiritual wellbeing, and to promote quality of life. Works with recommendations from Registered Dietician regarding diet restrictions, supplements and care plan recommendations for Health Services residents. Participates in resident care conferences as assigned. Supervises dining services staff, including nutritional services aides and wait staff , working in health services areas. Works closely with kitchen staff in planning food and snacks to meet resident needs. May be called on to provide residents and their families, staff, volunteers, etc. with meaningful nutritional and dietary education related to health service residents.

Also regularly supervises and supports front-house staff in Friendsview’s independent dining areas in setting up tables, serving food, clean up & maintenance, and in providing a high level of customer service.

Ensures that all practices and food handling are in accordance with sanitary standards and recognized food serving standards.

Essential Functions:

  • Adheres to Friendsview’s policies and procedures, including those covering privacy and security in compliance with HIPAA regulations, and codes of conduct. Maintains confidentiality and respects residents privacy at all times in accordance with HIPAA regulations.

Health Services: Nutrition/Dietetics

  • Addresses dietary needs and concerns of health services residents regarding types of diets requested or offered, food textures and purposes behind them, etc.
  • Meets with resident and/or resident families upon entering health services to discuss resident’s needs and desires, and nutritional dietary options.
  • Monitors residents’ habits at meals in order to provide ongoing input to the health care team and dining services regarding physical symptoms that may need to be considered for diet changes, as well as personal reflections at care conferences regarding the resident’s dietary needs and dining experience. Participates in care conferences.
  • Ensures that dining staff in health services areas are knowledgeable about, understand, and are sensitive to residents’ dietary needs including mechanical types of food processing, diabetic health and health heart considerations.
  • Coordinates resident dietary needs with food preparation and delivery to ensure a healthy and pleasing dining experience for health services residents.
  • Works closely with Therapeutic Recreational Services Coordinator to provide positive meal-related activities for health services residents.
  • Ensures snacks and snack cart items meet the needs of residents.
  • May participate in educational programs for residents and staff regarding age-appropriate nutrition and dietary needs of residents.

Daily Operations

  • Ensures that meals are served according to Friendsview’s dining and customer service standards.
  • Hires, trains, coaches and conducts formal and informal evaluations on reporting staff members.
  • Plans and conducts daily pre-service meetings and other staff training.
  • Creates and maintains weekly schedule, monitors & manages staff attendance according to dept. standards.
  • Consistently and efficiently completes all dining services department and employment-related paperwork- including schedules, changes, business fluctuations while maintaining a professional, calm and composed demeanor.
  • Completes labor cost analysis and reports as scheduled.
  • Creates signage and for food presentation that meets department standards.
  • Inspects work stations and practices to ensure that regulations and standards are maintained.
  • Adheres to the injury/accident, uniform and other department policies & standards.
  • Adheres to all Health Department and Oregon OSHA regulations.

 

  • Demonstrates a complete understanding of menu items and explains same to customers accurately.
  • Accommodate last minute orders and add-ons efficiently and courteously.
  • Manages and maintains small wares, delivery equipment and supplies.

Supervision and Staff Development In the performance of their respective tasks and duties all supervisors are expected to complete the following: (1) Perform quality work within deadlines with or without direct supervision. (2) Interact professionally with other employees, customers and suppliers, (3) Work effectively as a team contributor on all assignments, (4) Work independently while understanding the necessity for communicating and coordinating work efforts with other employees and departments. This position supervises numerous (2-8) hourly employees. This includes both catering personnel and at times culinary personnel.

  • Monitors all events and ensures proper food delivery and pick up times are met.
  • Ensures staff are in proper uniform and adhering to specific appearance standards.
  • Interviews, hires, trains and evaluates staff for positions.
  • Provides feedback and support to employees to further their development. Counsels as necessary.
  • Ensures that all hiring and training standards are met and documented for employees, including but not limited to required trainings for Long-term Care workers (including online assignments), Fact Training Completion, and Safety Training.
  • Seeks guidance and direction from department management and the human resources department regarding employee relations issues, especially in regards to protected leave, discipline and termination decisions.

 

Culinary Programs

  • Works with the chef to make sure that all menu items meet Bon Appétit’s Sustainability Commitments.
  • Ensures that all orders and sheets are distributed and updated clearly for all culinary staff.
  • Ensures that all foods, beverages, and garnishes are consistent with Bon Appétit culinary standards.
  • Works with Chef to ensure that portion sizes are standardized and maintained for all functions.
  • May prepare hors d’ oeuvres, sandwiches, deli plates, platters, salads, desserts as directed by chef or director.
  • Assembles and delivers or directs all food and supplies for catered functions to the scheduled location.
  • Regularly participates in daily meals and reviews set up, food display, taste, temperature and ease of use to determine better practices to implement. Works with staff on set up and food display to make sure that all meals meet established Great Expectations Catering standards.

 

Customer Service

  • Represents Friendsview in a courteous, efficient, and friendly manner in all customer and employee interactions.
  • Greets customers courteously, and interacts with customers in a manner to ensure customer satisfaction.
  • Interacts with customers and resolves customer complaints in a friendly and service oriented manner.
  • Reviews and Responds to all customer comments with-in 24 hours of submission.
  • Relays relevant comments from customers directly to director.

 

 

 

Other Duties & Responsibilities

Special Events

  • Acts as Special Event contact and Sales Person for health services.
  • Develops specialty menus and events per clients’ needs, budget and unit guidelines.
  • Plans and executes the operational elements of all specialty events and daily meals.
  • Is on site for all special events and ensures that they meet expectations of the department contact, resident or community function.
  • Make sure all events meet Bon Appétit Great Expectations standards.
  • Maintains special event marketing collateral and photographs.

 

Food & Safety
  • Ensures proper presentation, portion control, and maintenance of proper serving temperatures – follows HACCP standards, and temperature records.
  • Maintains sanitation and orderliness of all equipment, supplies and utensils within work area.
  • Handles foods items appropriately during preparation.
  • Adheres to all state requirements, Fact training Modules and HACCP procedures.
  • Attends safety meetings and participates in safety inspections.
  • Ensures that all injuries and accidents are reported on a timely and accurate basis.

 

General Duties & Responsibilities

Qualifications and Job Requirements:

  • Job Education, Licenses/Certifications, Knowledge & Experience:
    • AA degree or equivalent in Nutrition/Dietetics. Equivalent combination of training, education and/or experience may substitute for education.
    • At least two years similar work experience, prior experience in healthcare food service preferred.
    • General Hospitality knowledge and interest in sustainability and sustainable food practices
  • Supervising (direct reports and level of supervision): Hires, trains, coaches and conducts formal and informal performance appraisals for reporting staff members, Provides daily work direction; participates in communicating performance appraisals and/or making job/assignments changes subject to department manager approval. Provides guidance and direction primarily to direct service positions.
  • Decision Making: Decision-making, problem solving, and/or recommendations within scope of position responsibilities, with consideration of facts or options.
  • Interpersonal Skills/Interactions: Interactions are both one-on-one and in group settings, with own work group or other departments. Communications are routine and non-routine in nature and require discussion. Must be able to work as a member of a team, across departments to ensure best results for residents. Communication and interpersonal skills are important in the successful completion of job responsibilities.

  • Must be able to lead small meetings and trainings with employees and other members of the company and cover basic nutrition, dietary, health, safety, culinary and service topics.

Additional Requirements:

  • Must successfully pass the Department of Human Services (DHS) criminal background check and, if applicable, fingerprinting.
  • Must be able to pass a pre-employment drug screen.
  • Must be able to pass the pre-employment reference checks.
  • Must be able to provide the official grade transcripts of the education level provided on the employment application.
  • Must be able to provide a copy of his/her own social security card for W-4 documentation.
  • Must be able to provide applicable documentation(s) for I-9 in order to establish identity and authorization to work in the US.
  • Must have valid driver’s license, personal automobile liability insurance, and acceptable driving record.
  • Must maintain a current food handler’s card.
  • Complete all online and other training assignments in a timely manner.

 

Bloodborne Pathogens Exposure Category II: Your tasks involve no routine exposure to blood, body fluids, tissues, or other contaminated materials. In the event of an unexpected blood, body fluid or tissue spill there will be an employee available who has been designated to take responsibility for clean-up and decontamination of potentially infectious body substances. You are not to come in contact with potentially infectious body substances.

 

For Off Site Catering only: Bloodborne Pathogens Exposure Category I: Your tasks may involve occasional exposure to blood, body fluids, tissues, or other contaminated materials. In compliance with OSHA standards on blood borne pathogens, Friendsview Retirement community will offer Hepatitis B vaccine to all employees who are determined to be at risk of exposure to blood or other body fluids and follow up to all employees who have had an exposure incident. This vaccine will be provided at no cost to the employee.

 

Physical Requirements and Working Conditions:

Works in a clean, well-lighted and ventilated kitchen. Hazards typical to a food service kitchen (hot cooking surfaces, electrical equipment, wet floors, sharp objects and hazardous cleaning chemicals).

While performing the duties of this job, the employee is regularly required to:

  • Stand, talk or hear, and taste or smell.
  • Walk; use hands or fingers, handle, or feel; stoop, kneel, crouch, or crawl; reach with hands and arms.
  • Regularly lift and/or move up to 25 pounds and may occasionally lift up to 50 pounds.
  • Push and Pull carts weighing up to 100 pounds
  • Specific vision abilities required by this job include close vision, color vision, depth perception, and ability to adjust focus.
  • Must consistently utilize all Personal Protective Equipment per Friendsview and Bon Appetit guidelines.
  • Must wear a cut resistance glove whenever using a sharp or potentially sharp tool or instrument.
